I am obsessed with my air fryer, and now these fresh and healthy shrimp tacos!

This flavorful meal is not only light and satisfying but also easy to make on a weeknight. From succulent jumbo shrimp seasoned with spices to the creamy cilantro lime yogurt slaw and the zesty pineapple jalapeño salsa, each part of this simple recipe is bursting with flavor.

Really! Shrimp is transported frozen, so for the ultimate freshest shrimp in your food, it’s best to thaw it in your kitchen versus buying it pre-thawed at the butcher counter.

Fresh Shrimp Tacos Recipe with Cilantro Lime Yogurt Slaw and Pineapple Jalapeño Salsa

A healthier twist on taco night, made easy in an air fryer. You’ll love the refreshing cilantro lime yogurt slaw, zesty pineapple jalapeño salsa, and quick pickled onions.

 
 

Ingredients

Quick Pickled Onions:

1 large red onion

3/4 cup water

3/4 cup white vinegar

2 teaspoons salt

Crushed red pepper to taste

1.5 tablespoons honey

1 tablespoon brown sugar

Shrimp:

3/4 pound of jumbo frozen shrimp

3 tablespoons of olive oil

1.5 tablespoons of brown sugar

1 teaspoon of chipotle powder

1 teaspoon of garlic powder

1 teaspoon of chili powder

1 teaspoon of onion powder

1 teaspoon of Tajin or Chili Lime seasoning

1 tablespoon of smoked paprika

1 tablespoon of fresh lime juice

1/2 teaspoon of black pepper

Cilantro Lime Yogurt Slaw:

1.5 cups of Angel style or thinly shredded cabbage slaw

A handful of fresh cilantro

1/3 of a seeded jalapeño

Juice of 1.5 limes

1/2 cup of yogurt of your choice (such as no-fat strained Greek yogurt)

1 small garlic clove

Salt and pepper to taste

Pineapple Jalapeño Salsa:

1 steak (approximately 1 slab cut lengthwise) of fresh pineapple, finely chopped

1 tomato, diced

1 jalapeño, seeded and minced

1/4 of a white onion, minced

3 tablespoons of fresh cilantro, minced

Juice of 1/2 to 1 fresh lime, to taste

Salt to taste

Tacos:

6 corn tortillas or tortillas of your choice

1 fresh avocado

 

Method

Step 1:

Quick Pickled Onions

Thinly slice the red onion and pack it into a heatproof container.

In a saucepan, combine water, white vinegar, salt, crushed red pepper, honey, and brown sugar. Bring the mixture to a boil.

Pour the boiling pickling mixture over the sliced onions in the container.

Allow the mixture to cool on the counter, then transfer it to the refrigerator to pickle while you prepare the rest of the components.

Step 2:

Shrimp

Thaw the jumbo frozen shrimp in cold water. Strain and pat dry with a paper towel.

In a bowl, drizzle the shrimp with olive oil and sprinkle with brown sugar, chipotle powder, garlic powder, chili powder, onion powder, Tajin or Chili Lime seasoning, smoked paprika, fresh lime juice, and black pepper. Mix well.

Set aside the seasoned shrimp in the refrigerator while preparing the slaw and salsa.

When ready to serve the tacos, air fry the shrimp at 390 degrees Fahrenheit until they reach an internal temperature of 165 degrees Fahrenheit (use an instant-read thermometer to check). The shrimp should turn pink when done.

Step 3:

Cilantro Lime Yogurt Slaw:

In a food processor, combine a handful of fresh cilantro, seeded jalapeño, lime juice, yogurt, small garlic clove, salt, and pepper. Process until smooth.

Pour the mixture over the Angel-style or thinly shredded cabbage slaw and mix well. Set aside.

Step 4:

Pineapple Jalapeño Salsa

In a bowl, mix the finely chopped fresh pineapple, diced tomato, minced jalapeño, minced white onion, minced cilantro, fresh lime juice (adjust to taste), and salt.

Step 5:

Tacos

Warm the corn tortillas or tortillas of your choice, either by briefly air frying them or heating them on a skillet.

To assemble the tacos, layer the cilantro lime yogurt slaw, avocado slices, air-fried seasoned shrimp, and top it off with the vibrant pineapple jalapeño salsa and tangy pickled onions.
